Avocado Toast

One of my favorite on-the-go breakfast options is just this, an english muffin topped with cream cheese and avocado; avocado toast if you will. Yes, it's a bit stretch to call it the best breakfast ever, but it's got to rank up there. It's quick and easy, not to mention creamy and crunchy!

Avocados are packed full of nutrients that will nourish your cells from the inside out, including: vitamin A, C, E, and K, magnesium, potassium, iron, healthy monounsaturated fats, and fiber. The good fats and fiber in the avocado will fill you up and help you feel full longer.



Avocado toast is of course the simplest thing to make. Slice and toast a thick piece of bread, spread some cream cheese on it, and lay half of a sliced avocado on top. Sprinkle with salt and pepper. Devour. I got a little crazy this morning and topped the other half with an egg.
