Chia pudding is by far one of my favorite quick and easy breakfast options. I think it has to do something with preparing it the night before and in the morning it’s just waiting there for me to devour. A simple breakfast pudding that resembles the consistency of tapioca and it just happens to be delicious.
Chia seeds are the richest plant-based omega-3 fatty acids, which are essential for keeping your heart healthy. On top of that, they provide protein, dietary fiber, antioxidants, and minerals including calcium- up to three times more than a serving of milk. Superfood? Perhaps.
All you have to do is mix your chia seeds in a bowl with milk, a sweetner of your choice, stir well, pop in the fridge, and let it sit overnight. It's that simple. I think the hardest part is waiting for it to chill and set, don't you think?
Directions:
Vanilla Chia Pudding
Ingredients:
- 1 cup of milk of your choice
- 1/4 cup chia seeds
- 1 teaspoon vanilla extract
Directions:
- Combine all ingredients into a bowl and mix until blended. Stir to distribute seeds if they have settled.
- Let it sit in the refrigerator overnight.
- Remove from the fridge, and make sure your pudding looks thick and the chia seeds have gelled.
- Top with fresh fruit, nuts, yogurt, etc.
