While at the farmers market the other day I saw the most gorgeous papaya showcased in rustic tub filled with ice. I couldn’t keep my eyes off of them. They were so pretty that I ended up buying some and not having a clue what to do with them. But when the thought of wanting to make shrimp kabobs came to mind, I knew right then that I had to make a papaya and serrano pepper sauce to go along with um’.

On Saturday afternoon, I went to a farmers market. One of the many reasons why I love the south. They’re here all year round. During my visit, I bought many items but one in particular was this vibrant beauty, a prickly pear. I have never had one before so I was intrigued. I ended up having it for breakfast this morning, along with a bowl of flax flake cereal.

There comes a time when you buy bananas and then leave them on the counter until you notice that the object that was once yellow is now a heavily spotted mess. For me, this happens more often than not and without fail while contemplating at the grocery store on just how much bananas to buy I opt for more. Why? I know I’ll eat them. Wrong.

Running on a treadmill can be rather boring at times, such as running at the same pace for what seems to be endless miles at a time.  When your workouts are dull, you’re at risk of losing motivation to stick with your training. I enjoy tackling treadmill workouts that vary in speeds to hold my interest and give me a great workout at the same time.

Cabbage, Carrot, and Avocado Spring Rolls

I find spring rolls to be the perfect snack, the perfect (to go) lunch, contribution to a picnic, or even a light dinner. There are so many combinations, textures, colors, and flavors to experiment with- they can literally be made with anything you have in the refrigerator/pantry. I could eat these every night and be completely content. The fact that they are super easy to make is just an added bonus.

I've been on a tropical smoothie vibe lately, it must have to do with a yearning of summer. This past week has been nothing but rain, hail, and tornado warnings. A normal person would lean more towards the direction of a warm beverage, but not me! There’s something about a cool nutritious smoothie after a run that I dear so much. On days where I just can’t get it together a smoothie makes it all worthwhile...even suffering through a hail storm in the middle of spring.
