Chia pudding is by far one of my favorite quick and easy breakfast options. I think it has to do something with preparing it the night before and in the morning it’s just waiting there for me to devour. A simple breakfast pudding that resembles the consistency of tapioca and it just happens to be delicious.

weeks though. I really wanted to keep all of you updated throughout my training

Roughly, about a year ago, I fixed my heart on running a
half marathon. I even registered for the Denver Rock ‘n’ Roll Half for 2014 but
with the move back to Florida I couldn’t make it happen. But that’s okay.
I already have plans to run a half marathon in November of 2015 and to hold
myself over I have decided to run a 15K (9.32 miles) in February at the Gasparilla
Distance Classic in Tampa.
I searched the internet high and low for a training plan that would fit my needs; no luck there. There are two things that I love most about the weekends, exploring breweries on Friday night and hitting the farmer’s market with a latte in hand on Saturday morning.

Sometimes I still wonder why I left the
colorful state of Colorado. Days like today when I just want to grab my camera,
camelback, and hiking boots, hop in the Jeep and head straight for a
trail-head. I feel like I found a bit of myself out there. But- and even though
I miss that state dearly- I will never regret the trade-off for it all; family
and friends. Not to mention my recent acceptance into a Respiratory Therapy
program that I am utterly thrilled about.

One of my favorite on-the-go breakfast options is just this, an english muffin topped with cream cheese and avocado; avocado toast if you will. Yes, it's a bit stretch to call it the best breakfast ever, but it's got to rank up there. It's quick and easy, not to mention creamy and crunchy!
